This dissertation was written as part of the MSc in in Hospitality and Tourism
Management at the International Hellenic University. It presents a comprehensive
literature review on the implementation and use of new technologies in the hospitality
industry, with a focus on advancing towards a sustainable future. It systematically
examines existing academic and industry literature to explore how emerging
technologies are being integrated into hospitality operations and their impact on
environmental, economic, and social sustainability. The review encompasses a wide
range of technologies, including artificial intelligence (AI), the Internet of Things (IoT),
blockchain, and sustainable energy solutions, highlighting their applications in areas
such as energy management, waste reduction, customer service, and supply chain
transparency. The study also discusses the evolving role of digital platforms and smart
technologies in enhancing guest experiences while promoting sustainable practices.
Key themes identified in the literature include the potential of technology to drive
operational efficiency, reduce the environmental footprint, and create value for both
businesses and consumers. The dissertation critically evaluates the challenges
associated with technology adoption in the hospitality industry, such as high
implementation costs, the digital skills gap, and concerns regarding data privacy and
security.
Additionally, the review addresses the strategic implications for hospitality businesses,
emphasizing the need for a holistic approach to technology integration that aligns with
sustainable development goals. It discusses the role of stakeholders, including
management, employees, customers, and policy makers, in facilitating a successful
digital transformation towards sustainability. In conclusion, this dissertation provides a
